Juicy Aubergine & Courgette Platter

What you need

tbsp olive oil

tsp salt

tbsp balsamic vinegar

oz burrata

bunch fresh mint
courgette

cherry tomato

aubergine

clove garlic clove

oz pine nut

tbsp pesto

pickled jalapenos
Instructions
1: Slice the aubergine & courgette into 2cm thick rounds. 2: Sprinkle generously with salt & leave to sit for 20 minutes. 3: Pat dry with a tea towel to remove excess moisture. 4: For the glaze, mince the garlic then mix the balsamic & 2 tbsp olive oil. 5: In a non-stick pan, heat 2 tbsp olive oil, then fry your veg in batches. 6: Fry for several minutes on each side until golden + caramelised. 7: Brush the glaze on each side of the veg whilst frying, then set aside & repeat with remaining veg. 8: Layer up a platter with the aubergine & courgette, cherry tomatoes, mint, burrata, pickles & pine nuts. 9: Optionally drizzle with pesto/green dressing, then dig in & enjoy!View original recipe
