What you need

oz plain flour
oz cornflour

tbsp red pepper flake

tbsp granulated garlic
tbsp dried oregano

tbsp smoked paprika

tsp ground white pepper

fl oz sparkling water
oil

salt

tbsp mayo
tbsp chilli

tsp garlic

tsp ginger
lime

tsp soy sauce

tsp red pepper flake

tbsp black sesame seeds

tbsp spring onion
Instructions
1: Prepare the enoki mushrooms by chopping off the brown ends and slicing in half for smaller pieces. 2: For the batter, whisk the dry ingredients together in a large mixing bowl, then slowly add your sparkling water, stirring as you go until it reaches a pancake batter consistency. 3: Carefully coat each mushroom (both sides) in the batter so that they are fully covered. 4: Preheat your Ninja CRISPi, then air fry in batches for 15 minutes on each side, until the mushrooms are golden brown and crispy on the outside. 5: For the mayo, mix all the ingredients in a bowl.
