Lion's Mane Steak Salad

What you need

bunch fresh mint

Instructions
1: Chop your vegetables: cucumber into small chunks, tomatoes in half, radish into slices, carrot grated into ribbons, and shred lettuce, spring onion, red onion, mint, and coriander. Pour into a large mixing bowl. 2: For the dressing, mince the fresh ginger and garlic into a bowl, then mix with the juice and zest of 1/2 lime, 1 tsp each of miso, chilli oil, sesame oil, soy sauce, rice vinegar, agave, and sesame seeds. Mix well and season to taste. 3: For the mushrooms, heat a frying pan to medium high and add enough oil to cover the base of the pan. Sear the mushrooms, pressing down to release moisture. Season with salt and pepper on either side, adding more oil if needed. Cook for about 5 minutes on each side until golden brown. Finish by adding 1-2 tbsp of the dressing mix to coat the mushrooms. 4: Pour the remaining dressing over the salad ingredients, mix well, then serve in bowls.
