What you need

oz plain flour

oz panko breadcrumbs

fl oz oat milk

tbsp granulated garlic
tbsp vegetable oil

brioche buns

tbsp vegan mayonnaise

tbsp curry paste
lime

carrot

coriander

pickled beets

salt

pepper
Instructions
1: Cut the tofu block into four even slices. 2: Pour the flour into a shallow bowl, then season with garlic granules, salt & pepper. 3: Pour the oat milk & panko breadcrumbs into separate bowls. 4: Dip the tofu into the flour, then the milk, then the panko, making sure to get a good coating of each layer. 5: Make the curried mayo by mixing the mayo, 2tbsp of curry sauce & a squeeze of lime juice. 6: Peel the carrots into ribbons, and quick pickle your veg (or use pre-pickled). 7: Heat the vegetable oil in a frying pan. Once shimmering, carefully add the tofu & fry on a medium-high heat until golden brown & crisp on each side (around 5 mins each side). 8: In a separate pan, toast the brioche buns until golden. 9: Assembly time: spoonful of curry mayo, carrot ribbons, tofu katsu, spoonful more of curry sauce, pickley bits, fresh coriander & enjoy!View original recipe
