Instructions
1: Mash the avocado in a bowl. 2: Finely dice the vine tomato and add it to the avocado. 3: Finely chop the scallion and add it to the mixture. 4: Chop the fresh coriander once through and add it, avoiding the stems. 5: Squeeze the juice of half a lime into the mixture. 6: Add a splash of olive oil, a generous crack of salt and pepper, and a handful of chili flakes. 7: Toast the bagel until well done. 8: Butter the toasted bagel and generously smear the chunky avocado mixture on top. 9: Serve with rocket and tomatoes on the side.View original recipe
