Delicious Halloumi Cakes made with potatoes, halloumi cheese, and eggs, served with avocado smash and toasted pine nuts. A spontaneous creation from a near-empty fridge.

What you need

spring onion

splash olive oil

Instructions
1: Coarsely grate the potato, drain, and season well with salt, pepper, paprika, and oregano. 2: Mix with the finely diced spring onion, grated halloumi, and bind with an egg (or two, depending on potato quantity). 3: Mould into thin patties, leave to cool before shallow frying in olive oil until golden brown on both sides (3-4 minutes each side). 4: Serve with avocado (smashed, seasoned, olive oiled, herbed, and citrused), toasted pine nuts, and siracha.View original recipe
