Tzatziki with Chickpeas and Broccoli

What you need

tbsp smoked paprika
tbsp dried oregano

tbsp garlic powder

tbsp olive oil

oz greek yogurt

cucumber

garlic clove

oz fresh mint
lemon

oz chick peas

red onion

red chilli

oz fresh parsley

tbsp extra-virgin olive oil
Instructions
1: Separate the broccoli into even-sized pieces and season with salt, pepper, paprika, oregano, and garlic. Drizzle with oil and coat well. Roast at 180 degrees Celsius for 10-15 minutes or until charred. 2: For the tzatziki, grate the cucumber and squeeze out moisture. Combine in a bowl with yoghurt, minced garlic, chopped mint, and a squeeze of lemon. Season with salt and set aside. 3: For the chickpeas, mix with finely diced onion, chilli, minced garlic, lemon juice and zest, chopped parsley, and extra virgin olive oil. Season to taste with salt and pepper, then set aside. 4: To serve, spread tzatziki on a plate, add broccoli on top, followed by chickpeas.
