Shirazi Salad

A refreshing Persian salad made by chopping cucumbers, tomatoes, red onion, parsley, and mint, and tossed with a lemon dressing. Perfect for warm days and a great side dish.

What you need
lemon

pepper

tsp salt

oz fresh parsley

cucumber

oz fresh mint
fresh tomatoes

tbsp extra-virgin olive oil
Instructions
1: Slice the cucumber in half and scoop out the seeds. Finely dice the cucumber. 2: Finely dice the tomatoes and add to a sieve with 1 tbsp of salt. Leave to sit for 15 mins to draw out moisture. 3: Finely dice the red onion, fresh parsley, and mint. 4: Drain the tomatoes and cucumber, reserving 2 tbsp of tomato juice. 5: For the dressing, mix 2 tbsp of olive oil, tomato juice, salt, pepper, and the juice of a lemon. 6: Add the chopped tomato, cucumber, onion, and fresh herbs into a large bowl.
