A delicious and hearty chicken and rice salad made with salad leaves, tomatoes, avocado, leftover Uncle Ben's rice, and chicken breast strips, all beautifully layered and topped with a flavorful siracha-infused dressing.

Instructions
1: Prepare salad leaves as your base. 2: Finely slice vine tomatoes, season with salt, pepper, and olive oil. 3: Slice avocado and layer it on top. 4: Add leftover Uncle Ben's rice as the next layer. 5: Toss chicken breast strips in olive oil, garlic, oregano, and lemon juice, then add to the salad. 6: For the topping, mix plain yoghurt or mayo with siracha, lemon juice, crushed garlic, salt, and pepper. 7: Drizzle the siracha-infused topping over the salad. 8: Finish with a sprinkle of dried oregano.View original recipe
