A spicy and silky pasta dish perfect for Valentine's Day. This Mafalda alla Vodka features a saucy blend of onions, garlic, chilli flakes, tomato purée, vodka, and cream, topped with nutritional yeast for a cheesy flavor. Ideal for impressing your date!

What you need

pepper

fl oz vodka

bunch fresh basil

tbsp olive oil

fl oz cream

tbsp nutritional yeast

tbsp butter

onion

clove garlic clove
tsp chili flakes

oz tomato puree
Instructions
1: Finely dice the onion, then mince the garlic. 2: Warm 1tbsp of oil in a saucepan, then melt 1tbsp of the butter until browning. 3: Sauté the onion with a pinch of salt until softened. 4: Add the garlic & sauté until fragrant. Add the chilli flakes. 5: Squeeze in the tomato purée, then cook out for 5 minutes. 6: Add a basil sprig + allow to infuse. 7: Add the vodka, let it cook off, then add the cream & simmer. 8: Get the pasta into salted boiling water & cook until al dente. 9: Add the nutritional yeast / cheese & a splash of pasta water to loosen the sauce. 10: Stir in the drained pasta with more pasta water until silky & combined. 11: Garnish with fresh basil, a pinch of chilli flakes, a drizzle of oil + a sprinkling of nooch/cheese, then enjoy!View original recipe
