Instructions
1: Marinate cubed chicken breast with oregano, thyme, lemon juice, garlic, olive oil, and seasoning. 2: Add red onion chunks and mixed peppers to the marinade. 3: Pan-fry peppers, courgette, and red onion. 4: Stir in quinoa and vegetable stock, then reduce down. 5: Add fresh parsley, seasoning, and lemon juice to quinoa mixture. 6: Cook halloumi until perfectly cooked. 7: For tzatziki, peel and grate the deseeded cucumber and drain it thoroughly. 8: Mix natural yoghurt, crushed garlic, cucumber, fresh mint, dill, and season to taste. 9: Garnish tzatziki with olive oil and black olives. 10: Construct the Greek salad with tomatoes, cucumber, red onion, black olives, feta, olive oil, seasoning, oregano, lemon juice, and coriander.View original recipe
