Instructions
1: Roast the aubergine over an open flame, on a grill, or in the oven until the skin is charred & blistered (20-30 mins at 180 Celsius). 2: Place in a bowl with some clingfilm, allowing the aubergine to steam and cool. Then peel off the charred skin. 3: Chop and mash up the aubergine with a knife. Add to a bowl with tahini, crushed garlic, lemon juice, cumin, and season with salt and pepper. 4: To serve, spoon into a bowl, scatter over pomegranate seeds, fresh mint, toasted pine nuts, and extra virgin olive oil. 5: Serve with dipper of choice and enjoy!View original recipe
