This refreshing and colorful platter features juicy aubergine and courgette, perfect for summer picnics or barbecues. Topped with various delicious ingredients, it's exactly what's needed to enjoy a heatwave in the UK.

1: Slice the aubergine & courgette into 2cm thick rounds. 2: Sprinkle generously with salt & leave to sit for 20 minutes. 3: Pat dry with a tea towel to remove excess moisture. 4: For the glaze, mince the garlic then mix the balsamic & 2 tbsp olive oil. 5: In a non-stick pan, heat 2 tbsp olive oil, then fry your veg in batches. 6: Fry for several minutes on each side until golden + caramelised. 7: Brush the glaze on each side of the veg whilst frying, then set aside & repeat with remaining veg. 8: Layer up a platter with the aubergine & courgette, cherry tomatoes, mint, burrata, pickles & pine nuts. 9: Optionally drizzle with pesto/green dressing, then dig in & enjoy!
