1: If using tinned chickpeas, boil first for 30-40 minutes to soften. 2: Add chickpeas (reserve a handful to serve) and some of their juice to a food processor or blender. 3: Add garlic cloves, ground cumin, the juice of a lemon, and tahini, then blend. 4: Add more chickpea juice to loosen, then continue to blend, adding ice cubes to make it super creamy and smooth. 5: Season to taste with salt, then place in a bowl or plate. Garnish with reserved chickpeas, chopped parsley, a pinch of smoked paprika, and a drizzle of olive oil. 6: Toast the flatbreads and enjoy.
