FAVA is a classic Greek dip made with yellow split peas, onions, garlic, and capers. It's simple to make and has quickly become a favorite dip. The flavors develop beautifully if left in the fridge for a couple of hours, making it a perfect companion for pitta or any dipper of choice.

1: Place the peas in a bowl of cold water and rinse well. Strain and set aside. 2: In a large saucepan, add a good glug of olive oil over medium-high heat. Add the onion and sauté with a pinch of salt until softened (3-5 mins). 3: Add the garlic and fry until fragrant (1 min). 4: Add the peas to the pan, cover with water, add bay leaves, and a healthy pinch of salt and pepper. Stir to combine and bring to a simmer. 5: Reduce the heat and continue to cook for 25-30 mins, or until the peas are completely softened, skimming any foam and adding more water if required. 6: Once cooked, remove the bay leaf and transfer the mixture to a food processor. Blend until smooth, then add lemon juice and a drizzle of olive oil. 7: If the mixture is too hot, add an ice cube to cool down. Season to taste with salt and pepper. 8: For best flavor, leave in the fridge for a couple of hours. To serve, spoon into a bowl, top with parsley, onion, capers, and olive oil. Serve with pitta or a dipper of choice.
