Celebrate the end of courgette season with these caramelised courgettes on crunchy bruschetta. A heavenly piece of toasty indulgence to enjoy.

1: Slice the courgette into diagonal rounds & get 2tbsp of olive oil into a frying pan. Once hot, add the courgette with a pinch of salt. 2: Dice the red chilli & garlic, then add once the courgettes are caramelising & turning golden brown (couple minutes on each side). Turn down the heat & fry until fragrant (1-2 minutes). 3: Add a squeeze of lemon juice & a small handful of chopped mint & basil. Remove courgettes from the pan. 4: Add a splash more oil, then get the bread into the pan once oil is smoking. Fry until golden brown & crisp. Rub garlic into the crust. 5: Time to plate up – crunchy toast, courgettes, more basil & mint, lemon juice & enjoy!
