1: Slice the red onion and red pepper, and place them in olive oil on low heat to slow cook. 2: Season once they start cooking and add a splash of balsamic vinegar and 1 teaspoon of sugar for caramelization. 3: Cook for 15-20 minutes until they reach ideal flavor and consistency. 4: Place falafels in the oven or use cold ones if easier. 5: Finely dice cherry tomatoes, cucumber, and spring onion for the vegetable salsa. 6: Add a splash of olive oil, 1/2 the juice of a lime, chili flakes, salt, and pepper to the salsa. 7: Prepare tzatziki or hummus as a dip. 8: Place a wrap in a hot pan for 1 minute on each side for a lovely searing effect. 9: Spoon your choice of dip down the middle of the wrap. 10: Squash falafel balls into the base layer, add onions and peppers, and finish with fresh salsa. 11: Fold the wrap tight, cut in half, and serve.
