This sweet leek carbonara is a delightful twist inspired by Jamie Oliver's VEG cookbook. For a unique flavor, leeks are used as a substitute for pancetta lardons, combined with parmesan and eggs to create a satisfying sauce. Though I added a splash too much pasta water, the dish turned out excellent, making it a fantastic alternative to classic carbonara.

1: Prepare the leeks by slicing them thinly. 2: Cook leeks in a pan until they are soft. 3: Meanwhile, beat eggs in a bowl and mix in grated parmesan. 4: Cook pasta according to package instructions, saving some pasta water. 5: Combine the cooked pasta with the leeks and pour the egg and parmesan mixture over pasta. 6: Add a splash of pasta water to achieve the desired sauce consistency. 7: Serve garnished with parsley.
