A gourmet version of beans on toast that’s creamy, crunchy, and zingy! This delicious recipe combines butter beans with red onion, garlic, basil, mint, and a squeeze of lemon, served on crispy sourdough toast. Perfect for a tasty and hearty meal for two.

1: Finely dice the onion, chilli, garlic, and basil stalks. Heat 2 tablespoons of oil in a frying pan. 2: Sauté the onion with a pinch of salt until translucent, then add the basil stalks, chilli, and garlic. Fry until fragrant. 3: Drain the butter beans but reserve the liquid. Add the butter beans to the pan and sauté for a couple of minutes. 4: As the pan begins to catch, add 2 tablespoons of the butter bean liquid and simmer for 5 minutes. 5: Chop up the herbs and add to the butter beans with a squeeze of lemon. Heat a separate frying pan on high with 1 tablespoon of olive oil. 6: Slice the sourdough and fry on each side until golden brown and crisp. Rub garlic into the crust. 7: Serve the garlic bruschetta toast with the beans, a drizzle of olive oil, a squeeze of lemon, and a sprinkle of black pepper. Enjoy!
