Enjoy sumptuous vegan steak tacos with fresh pico de gallo and a delightful green roasted garlic salsa. This recipe serves 4 and is packed with flavor, featuring roasted garlic, fresh herbs, and a choice of toppings.

1: Chop 2 garlic bulbs in half, season with salt, pepper & a splash of oil. Wrap in foil & roast at 180°C until softened (40 mins). 2: Make the tomato salsa by finely dicing the tomatoes, red onion, some coriander and parsley, and red chilli. Mix with juice of 1 lime, a splash of olive oil & season with salt & pepper. Cover & set aside until ready to serve. 3: To make the green roasted garlic dressing, blitz together the rest of the coriander, parsley, mint leaves, 2 tbsp olive oil, juice of 1 lime, 1 tbsp water & the roasted garlic. Season to taste. Cover & set aside until serving. 4: Season the steak with salt & pepper, then break apart & fry in oil until caramelised (5-10 mins). 5: Toast your tortilla wraps, then assemble with steak, tomato salsa, green sauce & sriracha mayo if desired.
