A hearty and satisfying peanut butter fried rice made from leftover rice and various fresh vegetables including kale, spinach, and broccoli. Flavored with ginger, garlic, red chilli, and a blend of sauces including soy sauce and rice wine vinegar, this dish brings together a unique mix of flavors for an excellent packed lunch.

1: Grate a large piece of ginger. 2: Dice half a red chilli. 3: Mince half a banana shallot and several cloves of garlic. 4: Heat a wok and add the minced ingredients to sauté. 5: Stir in a large handful of kale and a large handful of spinach, along with small broccoli florets. 6: Add leftover rice and stir-fry until heated through. 7: Combine peanut butter, soy sauce, rice wine vinegar, ketchup, and Korean red pepper flakes to create a sauce. 8: Pour the sauce over the fried rice and mix well. 9: Sprinkle sesame seeds on top and squeeze lime juice before serving.
