A quick and healthy non-traditional Dal made in 20 minutes, perfect for a comforting meal. This dish includes a variety of spices, lentils, and can be served with naan or rice. Enjoy it with a drizzle of raita for extra flavor.

1: Finely dice the onion, then mince the ginger and garlic. 2: Heat 2 tablespoons of oil in a pan at medium heat, then sauté the onion until softened with a pinch of salt for 5-10 minutes. 3: Add the ginger and garlic, cooking until fragrant. 4: Add the spices, stirring well and allowing to cook for 1-2 minutes. 5: Rinse the lentils, then add to the pot, mixing well. 6: Add the tin of tomatoes, vegetable broth, coconut milk, soy sauce and peanut butter if using. 7: Bring to a boil, then lower to a simmer for 15-20 minutes. 8: Season to taste with salt, pepper and the juice of a lime. 9: Serve with whatever you choose, and enjoy!
