1: Dice the onions and garlic. 2: Finely chop the mushrooms and cook them in butter until softened. 3: Add the chopped fresh parsley, bay leaf, and cubed carrot. 4: Stir in the tinned tomatoes and passata, and season generously. 5: Add the beef stock and let it bubble. 6: Simmer on low heat for 45 minutes to reduce the sauce. 7: Add a splash of soy sauce further along in the cooking. 8: Serve with your choice of pasta, topped with fresh basil and Parmesan.
